To stop your iPod automatically updating itself when you plug it into the computer, hold down Command (Apple key) + Option while connecting the iPod to your computer. You can let go when the iPod appears in the Source list on the right side. This should stop it from updating.

If you want your iPod not to auto update all the time, just change this in the iPod preferences to Manual.
