You can scrub a track in iTunes skipping ahead while hearing it that is.

Here’s how:
To scrub backward and forward through a song while it is playing, use Command (Apple key) + Option + right arrow to scrub a track forward. Command (Apple key) + Option + left arrow to scrub a track backwards.
