Podcasts you subscribe to within iTunes can be selectively synced with iTunes. The play information will be synced back to iTunes from your iPod.

Here’s how:
iTunes can also automatically manage how your iPod will manage podcasts. Just go to the iTunes preferences -> iPod -> Podcast tab

Here you can tell iTunes which subscribed podcasts you want automatically synced to your iPod and which episodes.

When you listen to podcasts on your iPod, iTunes will know about it the next time you sync your iPod with it. Of course you can also select to “manually control” your podcasts also.
