There is an easy way to Fast Forward or Rewind Music & Video in the iPod app.

Here’s how:
Launch the iPod app. While the music is playing just press and hold down the forward or back arrows to fast forward or rewind tracks. Note: This works in the video player also.

There is a more manual method. Press on the album art to to get the drop down to appear (see right image above) and you can forward or rewind tracks.
